Glass Pot Brewers
Traditionally coffee has been brewed into glass pot brewers, and even today some customers prefer this old friend as their brewer, and we are happy to accommodate them. They come in automatic brewers that are attached to a water line, just push a button to make a pot of coffee. They also come in Pour Over brewers where you take a water pitcher to the sink and then you pour it over the top to make a pot of coffee.
Yet today we feel there are better ways to brew coffee. The most common form is the Airpot brewer as pictured below.

Thermal Brewers - Air Pots
Air pot brewers have become the new standard method to deliver coffee. They are the new standard because they keep coffee fresher for longer periods of time, by brewing right into a thermos.
Air pot brewers use standard outlets and generally they are plumbed units, with a hot water spigot. The airpot has a pump handle at the top, when it is pumped it quickly dispenses a cup of coffee. It also has an integrated carrying handle, which makes the airpot very transportable. The regular sized brewer is appropriate for 90% of the applications, and there are very large brewers generally used in a food service operation where huge capacity in needed.
(Air Pot Brewer is 21 5/8” high, and 8 ½” wide)
Eliminating “Cook Down” Means… Fresher Coffee
The heating plates employed by conventional glass pots, and some large batch brewers burns the coffee by driving off the water and oxidizing the oils, making the coffee progressively stronger and acidic and leaving that burned, bitter smell which characterizes many serving areas.
The key is retaining the heat from the original brewing process, not adding heat from an additional source. Airpots are a thermal brewer, which means that they are brewed into a thermos. The thermos is well insulated and it keeps coffee hot for a long, long time.
Less Coffee Waste
You will appreciate the reduced coffee waste provided by the thermal servers. Because people will no longer throw away a half-used pot because they don't like the taste caused by ‘cook down’.

Thermal Brewers - Programable Stength

All the benefits of the standard airpot brewers and now you can also choose the strength of the coffee, “Mild”, “Classic”, or “Strong” while using the same bag of coffee. The coffee strength is changed by altering the programming. Each program uses different brew temperatures, the length of the brew cycle, and the amount of water used. One version of this brewer can be configured to fit under a standard cabinet height of 18”.
The brewer also can be set up to serve into an airpot, gravity server, or a carafe. This is one flexible thermal brewing system.

Thermal Brewers - Gravity Servers

Gravity Server brewers have many benefits in common with the airpot brewers. One additional benefit is that the server has a sight glass showing how much coffee is remaining in the server.
Our concerns with these servers are three fold.
-
The sight glass cannot easily be cleaned. So over time a dark coffee film covers the sight glass and people think the whole server is dirty when actually it is only the sight glass.
-
Since gravity is allowing the coffee flow out instead of a pump, it takes longer to serve a cup.
-
Since the cup area is only 4 ¾” high it will not accept tall cups or travel mugs.

Thermal Brewers - Super Bowl
Super Bowl Brewers are what you need when you do not have enough height for a standard airpot brewer. Because it is only 16” tall, this lower profile is just what the doctor ordered in the limited space applications.
The only shortcoming is a shorter holding time compared to some other thermal brewers. Super Bowl Brewers hold coffee good and hot for about four hours, as opposed to almost 24 hours. Yet, we always recommend coffee be consumed within 4 hours anyway. Super Bowl Brewers are a significant improvement over the glass pot brewers, because we avoid the bitter taste from coffee “cook down”.

Large Batch Brewers
Mastercraft’s Large Batch Brewers create much better coffee than the old style batch brewers because ours do not allow “cook down”. Cook down is caused by a continous heat source burning the coffee. We will help you serve a better coffee, while eliminateing the waste of throwing away burnt coffee. Brewing right into thermal airpots, holds coffee at “ideal quality” for up to 3 hours, and keep it piping hot for over 8 hours. The base large batch brewer comes with the airpot as shown at no cost to the client. Extra airpots or upgraded airp pots maybe available at an additional cost.
Our large batch brewers are able to brew anywhere from 12 to 36 cups at a time. Ideal electrical requirements are 240 volts for brewing up to 2 gallons at a time. Max capacity is up to 480 cups per hour. Mastercraft can also set up this brewer to run on 120 volts. This brewer is flexible and can be set up at 120 volts, yet the amount of time in between brew cycles increases. (Delays may be up to 18 minutes) This is a viable setup when multiple batches are not necessary.

Econo Series Airpots
Econo Series Airpots come in 1.5 gallon or 2 gallon airpots. Our Airpot Servers are able to be placed anywhere without a heat source. They are attractive looking while still being a good value because they use black plastic legs to support the airpot. These are great for back or front of the house service. There may be a small premium to be paid if the Econo Series is used.
Executive & Presidential Series Airpots
Both in these series are beautiful stainless steel thermal airpots which make coffee service elegant. For a small charge you can purchase these airpots.
